Brownie Cookies

  • Author: Elsa
  • Total Time: 25 minutes
  • Yield: 2 dozen cookies 1x

Description

These Brownie Cookies are the best of both worlds—soft, chewy cookies with a rich, fudgy brownie-like texture and deep chocolate flavor. Perfect for chocolate lovers, they’re easy to make and guaranteed to satisfy any sweet tooth.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, melted
  • 1 3/4 cups granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 cup semisweet chocolate chips (optional, for extra chocolate goodness)

Instructions

  1. Preheat and Prep: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. Mix Wet Ingredients: In a large mixing bowl, whisk together the melted butter and sugar until smooth. Add the eggs one at a time, stirring well after each addition. Mix in the vanilla extract.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, cocoa powder, salt, and baking powder. Gradually add the dry ingredients to the wet mixture, stirring just until combined. Be careful not to overmix. If using chocolate chips, fold them in gently at this stage.
  4. Shape the Cookies: Using a tablespoon or small cookie scoop, drop rounded portions of dough onto the prepared baking sheets, spacing them about 2 inches apart. Gently press down on each ball of dough to flatten slightly.
  5. Bake to Perfection: Bake in the preheated oven for 8–10 minutes, or until the edges are set but the centers still look soft. Avoid overbaking for that signature fudgy texture. Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  6. Serve and Enjoy: These Fudgy Brownie Cookies are best enjoyed warm with a glass of milk or stacked neatly in an airtight container for up to 5 days.

Notes

  1. For a gluten-free version, substitute all-purpose flour with a gluten-free 1:1 baking flour and ensure the cocoa powder is certified gluten-free.
  2. If you prefer a shiny top on your cookies, brush them lightly with milk or melted chocolate after removing them from the oven.
  3. Store leftover cookies in an airtight container at room temperature for up to 5 days, or freeze for longer storage (up to 3 months).
