  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (15-ounce) can kidney beans, rinsed and drained
  • 1 cup frozen corn
  • 2 cups beef broth (or chicken broth)
  • 1 (1-ounce) packet taco seasoning (or homemade taco seasoning)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, diced avocado, fresh cilantro, tortilla chips, or lime wedges

Instructions

  1. Sauté the Aromatics: Heat olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.
