Ingredients
Scale
For the Peach Filling:
- 2 large ripe peaches, peeled, pitted, and diced
- 1 tablespoon lemon juice
- 2 tablespoons brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
For the Egg Roll Wrappers:
- 8 square egg roll wrappers
- 1 egg, lightly beaten (for sealing)
For Frying:
- Vegetable oil (for deep frying)
For Serving:
- Vanilla ice cream or whipped cream (optional)
Instructions
- Prepare the Peach Filling: In a medium saucepan, combine the diced peaches, lemon juice, brown sugar, cinnamon, nutmeg, and salt. Cook over medium heat, stirring occasionally, until the peaches soften and the mixture thickens slightly (about 8–10 minutes). Remove from heat and let it cool to room temperature.
- Assemble the Egg Rolls: Lay an egg roll wrapper flat on your work surface with one corner pointing toward you. Place about 1–2 tablespoons of the cooled peach filling near the bottom corner of the wrapper. Fold the bottom corner over the filling, then fold in the sides and continue rolling upward. Brush the top corner with the beaten egg to seal the roll tightly. Repeat with the remaining wrappers and filling.
- Fry the Egg Rolls: Heat about 1 inch of vegetable oil in a deep skillet or pot over medium-high heat until it reaches 350°F (175°C). Carefully add 2–3 egg rolls at a time (do not overcrowd) and fry for 2–3 minutes per side, or until golden brown and crispy. Use tongs or a slotted spoon to transfer them to a plate lined with paper towels to drain excess oil.
- Serve Warm: Arrange the Spiced Peach Cobbler Egg Rolls on a serving platter. Serve immediately with a scoop of vanilla ice cream or a dollop of whipped cream for an extra touch of decadence.
Notes
- For a gluten-free option, use rice paper wrappers instead of traditional egg roll wrappers—soak them briefly in water before assembling to make them pliable.
- To prevent the filling from leaking during frying, ensure the egg rolls are tightly sealed by pressing the edges firmly after brushing with the beaten egg.
- If you prefer baked egg rolls, brush them with oil and bake at 400°F (200°C) for 15–20 minutes, flipping halfway through, until golden brown.
