For the Cake:
- 1 box (15.25 oz) vanilla cake mix (plus ingredients listed on the box: eggs, oil, and water)
- 1 cup fresh strawberries, pureed
- 1 box (3 oz) strawberry gelatin
For the Topping:

- ¼ cup powdered sugar
- 1 teaspoon vanilla extract
- ½ cup assorted pastel sprinkles (for decoration)
- Optional: fresh berries or edible flowers for garnish
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Prepare the vanilla cake mix according to the package instructions, but replace 1 cup of water with the pureed strawberries. Pour the batter into the prepared dish and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the strawberry gelatin according to the package instructions, but use only 1 cup of boiling water (instead of 2 cups) to make it more concentrated. Let it cool slightly.
- Once the cake is out of the oven, use the handle of a wooden spoon to poke holes all over the cake, spacing them about 1 inch apart. Slowly pour the prepared gelatin over the cake, ensuring it seeps into the holes. Refrigerate the cake for at least 2 hours to set.
- In a large bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Spread the whipped cream evenly over the chilled cake.
- Decorate with pastel sprinkles and, if desired, fresh berries or edible flowers. Slice and serve chilled.
