  • 1 box (3 oz) strawberry gelatin

For the Topping:

  • 2 cups heavy whipping cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • ½ cup assorted pastel sprinkles (for decoration)
  • Optional: fresh berries or edible flowers for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Prepare the vanilla cake mix according to the package instructions, but replace 1 cup of water with the pureed strawberries. Pour the batter into the prepared dish and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  3. While the cake is baking, prepare the strawberry gelatin according to the package instructions, but use only 1 cup of boiling water (instead of 2 cups) to make it more concentrated. Let it cool slightly.
  4. Once the cake is out of the oven, use the handle of a wooden spoon to poke holes all over the cake, spacing them about 1 inch apart. Slowly pour the prepared gelatin over the cake, ensuring it seeps into the holes. Refrigerate the cake for at least 2 hours to set.
  5. In a large bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Spread the whipped cream evenly over the chilled cake.
  6. Decorate with pastel sprinkles and, if desired, fresh berries or edible flowers. Slice and serve chilled.
